Persimmon, a Winter Fruit:

This underrated and colorful fruit definitely deserves a place on your table and is always featured in our Winter menus. The most widely cultivated variety is the Oriental or Japanese (fuyu or hachiya), which when perfectly ripe, are excellent in both savory and sweet recipes – we use it raw in salads, as part of the fruit plate, sautéed in butter and ice cream, or stewed with star anise, clove and cinnamon served with sautéed foie gras, just to state a few of our recipes.
